Hand-crafting coffee and tea for more than three decades, John Weaver, apprenticed under two legendary coffee experts, Sal Bonavita and late Alfred Peet. It was Alfred Peet’s wish that John would one day start his own company, and in late 2007, John left Peet’s after 27 years of roasting coffee, to launch Weaver’s Coffee & Tea with Michael Brown, Renee Brown and Bryce Inouye.
Today, he continues to artistically hand-roast coffee in controlled batches, and hand blend fine tea. Through the careful manipulation of time, temperature, and airflow, each batch is roasted to unlock the full, inherent potential unique to each lot of coffee. Blending is an art in itself. Bean composition of each blend is decided by first roasting to a specific origin, which is then mixed with varied amounts of other lots and roasts. Methodically, Weaver’s narrows it down to the perfect cup of coffee through “cupping” – a skill mastered through time and experience. Having cupped roughly two hundred coffees a day, John has the ability to commit these tastes and experiences to memory providing continuity regardless of how each crop may have turned out this season.
Weaver’s starts with only pure, 100% Arabica green beans, selected from the finest growing regions around the world. Realizing a responsible, sustainable business while actively participating as part of both our local and global communities, they participate in OCIA International, offer Fair Trade certified products and make donations and contributions to local and regional schools and non-profit organizations.
