Banana Bread from Canteen and AMIkids

- 1 1/2 cups sugar
- 1/2 cup olive oil extra virgin
- 2 eggs
- 1/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 1/2 cups all-purpose flour sifted
- 3 bananas
- 1 vanilla bean
Preheat oven to 325 degrees
Cream olive oil and sugar for five minutes
Add eggs
Sift all dry ingredients together and add half at a time to the wet mixture
Once dry ingredients are incorporated, add whole, peeled banana
Split the vanilla bean and scrape into the mixture
Mix until smooth
Spray the pan pan very well with baking spray
Fill halfway with mixture
Bake until a toothpick sticks in the middle and comes out clean, approximately 35-50 minutes
