Primavera Cauliflower Sauce for Pasta and Veggies

Ingredients
Method
- Heat oil in saucepan over medium heat. Add onion and garlic and cook until tender, stirring occasionally
- Stir in cauliflower, add broth, and bring to a boil
- Reduce heat and simmer, covered, until tender (about 15 minutes)
- Uncover and remove from heat. Allow to cool slightly
- Transfer to food processor and add water, cheese, salt and pepper. Pulse until smooth
- Toss with some roasted spring veggies and pasta of choice. Garnish with a little more parmesan and enjoy!
